Simple Banana Bread Recipe
This is a great recipe for anyone who wants a simple recipe for Banana Bread. If you’ve not tried Banana Bread before try this recipe first and then perhaps try some of the other recipes!

READY IN: 1 Hr 20 Min
SERVINGS: 12
INGREDIENTS
* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 cup butter
* 3/4 cup brown sugar
* 2 beaten eggs
* 2 1/3 cups mashed overripe bananas
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan.
2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

I just made it, this recipe is on the right track. Moist with a good flavor, a little more bananas and a little less flour would improve it! 7 out of 10 !

This is pretty good… I agree with the previous poster–add more banana and a little less flour… This is also a good recipe to embelish with some personal flair: add some orange juice and grated orange rind or some chocolate chips or maybe macadamia nuts and coconut… But it’s pretty good plain, too!

Could anyone tell me if I can add walnuts to this recipe? and if so, how much can I add?

You can add walnuts or another type of nut like pecans. You could also add fruit or even chocolate chips. I would add about 1/2 cup of walnuts (or other ingredient).

Good recipe!
I made a few alterations.
I’m in the Uk so I weighed things in grams.
230g plain flour, 1/4 tsp salt, 1 tsp bicarbonate of soda, 115g butter, 170g dark brown sugar, 2 eggs and I only had 3 overripe bananas so I put in a dash of orange juice as suggested above.
I also do not have a loaf tin so I used a round cake tin.

Gemma. To measure half a cup of butter do the following:
Half fill a cup with water and then fill the cup with butter until the water reaches the top of the cup. Empty out the water and there you have, half a cup of butter!

can anybody tell me what would happen if i used cornflour instead of all purpose? its all i have in the cupboard but unsure if it would work, im not an experienced baker so i have no idea! willing to give it a go but mabye someone could save me from potential disaster!!

I used cornmeal/flour in a banana bread recipe by mistake. I was out flour, went to the store and quickly grabbed what I thought was flour. When I got home it said corn flour. I had to use it as all the other ingredients were mixed. The banana bread was some of the moist bread I have ever made. Texture was ‘grainier’, along the lines of corn pones, but the flavor delicious. I received a lot of compliments on it. Friends said the bread remained moist longer.

Ihad to use white sugar as I ran out of the brown, but I added more bananas and it was awesome! I also added chocolate chips and my hubby and brother thought they were in heaven!

Simple easy and tastes great thanks for this, I tried cutting down the sugar and using half margerene half butter and it still worked well
