Here’s an oatmeal banana bread recipe I found on the net. The oatmeal gives it a nice wholesome texture.

INGREDIENTS

* 1 1/4 cup all-purpose flour
* 1/2 cup unpacked brown sugar
* 1/2 tsp table salt
* 1/2 tsp baking soda
* 1/4 tsp baking powder
* 1 large egg, beaten
* 3 tsp canola oil
* 2 medium egg whites, beaten
* 3 large ripe bananas
* 1 cup uncooked old fashioned oats

DIRECTIONS

1. Preheat oven to 350F.

2. Spray the 9×5 inch loaf pan with flour-added cooking spray. Otherwise you can also choose to grease the pan.

3. In a large bowl, mix together all-purpose flour, brown sugar, table salt, baking soda and baking powder.

4. Stir in the canola oil and eggs into the bowl.

5. In a separate bowl, mash bananas with a potato masher or fork. Thereafter add bananas and oatmeal to the batter.

6. Pour batter into the loaf pan and bake it for about 45 to 50 minutes. Use a toothpick or cake tester and insert in the middle. If it comes out clean your banana bread is ready.

7. Allow the loaf to cool in the loaf pan for 10 minutes before removing from the pan and allowing to cool fully on a wire rack.

  1. I searched Google for a healthy banana bread recipe and I’m so glad I found this one. Just made the bread tonight and my family went crazy over it!

    The only changes I made was to use 1/2 cup of egg beaters in place of the egg and egg whites and I added 1/4 cup of wheat germ. It was AMAZING! Thank you for posting it!

  2. Absolutely the best banana bread I have ever had, although I did add vanilla, a little cinammon and a cup of pecans.

  3. This bread is very easy to make and is reasonably healthful. It is also a little dry and not very sweet. I really enjoy the texture of the oatmeal and feel that the bread base is sound but next time I will try it with applesauce and vanilla. Also, I found 40 minutes to be a little too long in my oven so err on the side of caution with the cook time.

  4. Lovely banana bread. Used the two egg yolks in the mix too as I never know what to do with them otherwise. I added a fourth banana and half a cup of oat bran (to make up for the additional liquid), some vanilla and cinnamon. To give it some crunch, I added half a cup of chopped pecan nuts and a good glugg of maple syrup. We’re invited tonight, this will make a nice little gift for the host family.

  5. Well my 6yr old son and I made this banana bread but I accidently overlooked the egg whites…oops, and we added raisins into the mixture at the end before it went into the oven. We are happy to report that this is yummy!
