This banana bread recipe was an experiment that turned out quite well (in my opinion). It’s not your usual banana bread and has a little kick to it. Give it a try if you’re feeling adventurous!

INGREDIENTS

* 2 cups plain flour
* 1 teaspoon baking soda
* 1/2 teaspoon ginger
* 1/2 cup white sugar
* 1/2 cup brown sugar
* 1/2 cup butter or margarine
* 2 eggs
* 2 mashed ripe bananas
* 2 chopped ripe kiwis
* 1 teaspoon vanilla
* Juice of 1/2 lime

DIRECTIONS

1. Preheat oven to 350F/180C. Lightly grease a loaf pan or spray with cooking spray.

2. In a mixing bowl mix together the flour, baking soda and ginger.

3. In another mixing bowl cream together the white sugar, brown sugar and butter or margarine. Add the eggs, mixing well and then add the mashed banana. Finally, squeeze in the juice of 1/2 a lime and mix well.

4. Add the dry ingredients into the wet ingredients, mixing well. Peel the kiwis and chop into fairly small pieces. Add in the chopped kiwis.

5. Spoon the mixture into the prepared loaf pan and place in the center of the preheated oven for around 1 hour 20 minutes. Cooking times may vary, so check the loaf is done by inserting a toothpick or sharp knife into the center of the loaf. When the loaf is ready it should come out clean.

6. Allow the loaf to cool in the pan for ten minutes before removing and placing on a wire rack to cool fully.

TIPS: I also used 1/4 cup of walnuts in the recipe because I love walnuts! If you’re a nut lover you can add 1/4 cup of your favorite nuts!

  1. I would never have thought to add kiwi fruit. I haven’t had banana bread in a long time. This sounds good!

  2. I did change some details but this did not work out for me at all :(
    I added 1/3 cup applesauce, put only 3/4 cup sugar, and put three instead of two bananas (they were small), I also didn’t have any brown sugar so I just put white in, oh and 6 tablespoons butter instead of 8. Anyway, I know it’s a lot of changes, but I wanted to reduce fat and sugar and I’d always heard applesauce was good to add. Anyway, I put it in the oven for 1 hour 20 min and it wasn’t done, I put it for an extra 10 min, but it still was soft on the inside! Finally I let it cool outside and the center is still gooey! :( Someone please recommend how to fix this, I’m awfully sad I won’t have banana bread tonight!

  3. Sorry your version of the recipe didn’t work out. It sounds like you either made the mix too wet or didn’t bake it long enough.

    Did you check the loaf was done by inserting a toothpick or sharp knife into the center of the loaf?

    If the toothpick or knife doesn’t come out completely clean it probably needs longer in the oven.

    It’s also a good idea to let the loaf cool in the pan for a good 10-15 minutes before removing it from the pan.
