This recipe combines blueberry, pecans and sour cream to give a rich flavored (and colourful!) banana bread recipe.

SERVINGS: Four 7×3 inch loaves

INGREDIENTS

* 3/4 cup butter
* 3 cups white sugar
* 1/2 teaspoon salt
* 3 eggs
* 16 ounce sour cream
* 2 teaspoons vanilla extract
* 2 teaspoons ground cinnamon
* 3 teaspoons baking soda
* 4 1/2 cups all-purpose flour
* 6 very ripe bananas, mashed
* 1 cup of chopped pecans
* 3-4 cups of blueberries

DIRECTIONS

1. Prepare 4 regular loaf sized pans and grease them.

2. Add and mix butter and sugar followed by salt, baking soda and flour in a big bowl.

3. Mix eggs, mashed bananas, sour cream, vanilla and cinnamon in a separate bowl.

4. Combine the 2 and add in pecan nuts and blueberries.

5. Transfer the mixture to the 4 pans and sprinkle pecan nuts on top.

5. Bake at 300 for approximately 1 hour.

6. Check if the loaf is ready by inserting a toothpick. If it comes out clean, it’s ready to be taken out of the oven.

  2. The recipe can easily be halved — I made 2/3 of it (used three pans). Used apples (cut into quite small pcs.) instead of blueberries and absolutely delicious. Trust the 300 temperature; I went w/350 and top got just a bit too done. Will make again for holidays. Would be delicious warmed w/ice cream. Spray bottom well so won’t stick. Soften, do not melt butter.

  5. I made this recently looking for just a banana bread recipe and thought this looks good and it was soo de-lish. Prep time seemed long but worth it. I used 4 cups of blueberries so it was alot darker than the norm banana bread. Brought this into work and my co-workers LOVED it!! Made 4 big loaves….didn’t last.

  6. love banana bread but mine seems to come out too heavy..how bout a quick fix??

  7. Hi, not too sure but you may be using too much flour. Try to mix the dough then turn it out and knead it without using more flour so your dough will be more wet
