Banana Walnut Muffin Recipe
This recipe was originally intended to be a banana bread but it can also be made into delicious little muffins. The result is an almost perfect and very moist muffin to be served to your family and friends!

SERVINGS: 6 big muffins or 12 regular ones
INGREDIENTS
*1/4 cup + 2 tablespoons unsalted softened butter
*4 ounces softened cream cheese
*1 cup sugar
*1 egg
*3/4 cup mashed ripe bananas
*1/4 teaspoon vanilla extract
*1 1/2 cups all purpose flour
*1/4 teaspoon baking powder
*1/4 teaspoon baking soda
*1/4 teaspoon salt
*1 cup chopped walnuts or pecans
DIRECTIONS
1. Add and mix cream the butter, cream cheese and sugar in bowl till it is light and fluffy.
2. Add the egg and mix well, followed by the bananas and vanilla.
3. In a different bowl, mix in flour, baking powder, baking soda and salt.
4. Combine the contents of the 2 bowls together.
5. Finally, add in the walnuts .
6. Prepare a muffin tin and grease it before distributing the batter into the tin. Spinkle chopped walnuts on top.
7. Bake at 350 for 30 minutes for jumbo muffins or 20-22 minutes for regular muffins.
8. Check if the loaf is ready by inserting a toothpick. If it comes out clean, it’s ready to be taken out of the oven.
TIPS: You may want to use pecan or even almond nuts to achieve a different taste. Let me know the results!

What makes the bread extra dense and moist ? I have been looking for a recipe for specifically those two things. All of the recipes I find taste great but aren’t quite what I’m looking for. I haven’t yet tried cream cheese so I will try this one and get back to you. Thanks Again !!
