Banana Peanut Butter Chocolate Chip Bread
This recipe uses mint chocolate chips to produce a lively and unique tasting banana bread. If you don’t fancy mint in your banana bread you can use regular or dark chocolate chips.

INGREDIENTS
*1 cup white flour
*1/4 cup whole wheat flour
*1/4 cup sugar
*1/4 cup brown sugar
*1/2 T. baking powder
*1/2 t. salt
*1/4 t. cinnamon
*1 large ripe banana, mashed
*1/2 c. skim milk
*1/3 c. plus 1 T. peanut butter
*1 T. canola oil
*1 t. vanilla
*3 T. egg substitute
*1/2 c. chocolate chips
DIRECTIONS
1. Add and mix flours, sugars, baking powder, salt & cinnamon in a big bowl.
2. Mix mashed banana, milk, peanut butter, oil, vanilla & egg substitute in a separate bowl.
3. Add the previous combination to the flour mixture (1st bowl) and stir till you achieve a homogeneous mixture.
4. Add in chocolate chips and continue mixing.
5. Prepare a regular loaf sized pan and grease it before adding the batter into the pan.
6. Bake at 350 for approximately 35-45 minutes.
7. Check if the loaf is ready by inserting a toothpick. If it comes out clean, it’s ready to be taken out of the oven.
TIPS: You may want to use other chocolate chip varieties such as dark, white, or butterscotch chocolate chips. You may also experiment with smooth or chunky peanut butter to achieve a different texture.
