Banana Cake with Cream Cheese Recipe

INGREDIENTS FOR BANANA CAKE
* 3 cups all-purpose flour
* 1 1/4 tsp. baking powder
* 1 1/4 tsp. baking soda
* 1/2 tsp. salt
* 2/3 cup shortening
* 1 1/2 cups sugar
* 2 eggs, separated
* 4 mashed bananas
* 1 cup milk
INGREDIENTS FOR CREAM CHEESE FROSTING
* 1 pkg (8 oz) cream cheese, softened
* 1/4 cup butter, softened
* 4 cups confectioners’ sugar
* 1 tsp. vanilla
* dash salt
DIRECTIONS
1. Preheat the oven to 350°F.
2. Glaze 9 x 13 inch baking pan with a small amount of oil and evenly distribute some flour on it. Flip over and tap to remove all loose flour.
3. In a large bowl, cream shortening and sugar until light and fluffy.
4. Stir in egg yolks one at a time, beating well after each addition.
5. Add bananas and milk and mix until just combined.
5. In another bowl, mix in the flour, baking powder, baking soda and salt.
6. Add to the creamed mixture and beat the overall mix for 2 minutes.
7. In another bowl, beat egg whites and fold it into the batter.
8. Cook for around 45 minutes, check it after 30, and then 5 minutes after.
9. Check if the cake is ready by inserting a toothpick. If it comes out clean, it’s ready to be taken out of the oven.
10. To make the cream cheese frosting, beat cream cheese and butter in a large bowl until fluffy.
11. Add the confectioners’ sugar, vanilla and salt and stir it well until smooth.
12. Spread the frosting over the cake evenly and store in the refrigerator before serving.
