Banana Bread with Sultanas Recipe
This is a recipe submitted by one of our readers recently. It’s one that combines soft moist banana bread with juicy sultanas. Also, this recipe produces a dense loaf that does not get too crumbly. Thanks Paul!

INGREDIENTS
* 170g sugar
* 225g self raising flour
* 115g butter (or margarine)
* 2 eggs
* 3 medium banana (best if very ripe)
* 1 cup sultanas
* 1 cup walnuts
DIRECTIONS
1. Preheat the oven to 180°C / 350°F / gas mark 4.
2. Grease a 2lb loaf tin with butter.
3. Mash the bananas in a bowl.
4. In another bowl, bream together butter and sugar.
5. Add the eggs and continue mixing.
5. Add the mashed bananas from the other bowl and mix together.
6. Add in the flour and sultanas. You could add optional ingredients like walnuts to make it “nuttier”.
7. Transfer the mix to the loaf tin.
8. Cook for around 40 minutes, check it after 35, and then 5 minutes after.
9. Check if the loaf is ready by inserting a toothpick. If it comes out clean, it’s ready to be taken out of the oven.

im not very good at baking but this turned out to my amazement, i also added choc chips, ……..lovely, thanks for the recipe!
