Banana Bread Muffins
These Banana Bread muffins are great for breakfast. If you don’t like walnuts you can leave them out or substitute in some raisins or chocolate chips!

INGREDIENTS
* 2 cups all-purpose flour
* 1 cup white sugar
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 cup vegetable oil
* 1 egg
* 3 ripe bananas, mashed
* 1/4 cup chopped walnuts
DIRECTIONS
1. Preheat the oven to 350 degrees F / 175 degrees C.
2. Place some muffin cups in muffin tin or grease the tin with some butter.
3. Mix the sugar, oil and egg until creamy and light yellow. Add bananas and walnuts. Add flour, baking soda, and salt. Stir until completely smooth. Spoon the batter into the muffin tin.
4. Bake for 30 to 40 minutes, until toothpick poked in center muffin comes out clean.

In the picture it looks like there is oatmeal on top but that isn’t in the recipe. I’d like to add the oatmeal, any tips?

Simply sprinkle some oatmeal on top of the loaf before placing it in the oven. I like to sprinkle a little brown sugar mixed with cinnamon on top too. If you like nuts you could also try sprinkling a handful of chopped walnuts or pecans. Just experiment a bit… that’s how I come up with delicious new recipes!

OMG! I just took the muffins out of the oven and they are amazing. Will definitely put this in my recipe book to make in the future and even pass on to my children. once again, OMG!!!!

Just made these with my kids, very easy, looked and smelt delicious, however i found them far too sweet! next time i am going to halve the sugar.
