This recipe has an interesting mix-in of apples to the typical banana bread. I’ve only discovered this and yet to try it out, but I am pretty excited about it. Do post and let us know the how good this recipe is should anyone give in to temptation and make a loaf.

INGREDIENTS

To prepare the apples
* 2 tablespoons unsalted butter
* 3 tablespoons firmly packed dark brown sugar
* 2 Granny Smith apples (or any other), peeled, cored, and cut into 1/2-inch pieces
* ½ teaspoon ground cinnamon
* ½ teaspoon pure vanilla extract

To prepare the banana bread

*2 cups all-purpose flour
*1 teaspoon baking soda
*½ teaspoon ground cinnamon
*¼ teaspoon ground cloves
*¼ teaspoon freshly ground nutmeg
*½ teaspoon kosher salt
*8 tablespoons (1 stick) unsalted butter
*1 cup granulated sugar
*2 large eggs
*¼ cup fresh orange juice
*1 teaspoon pure vanilla extract
*1 ¼ cups very ripe mashed bananas (2 to 3)

DIRECTIONS for the Apples

1. Preheat a medium skillet at medium-high heat.

2. Add butter and brown sugar and heat till it bubbles.

3. Add in sauté, cinnamon and apples until they are golden and tender. This typically take five minutes.

4. Finally, stir in the vanilla and allow the mix to cool.

5. A tip from Joy would be to chop one apple into small pieces and to grate the other to achieve an interesting texture.

DIRECTIONS for the Banana Bread

1. Preheat the oven to 180°C / 350°F / gas mark 4 and grease your 1 1/2-quart loaf pan with butter

2. In a bowl, mix in flour, baking soda, cinnamon, cloves, nutmeg, and salt to a homogeneous mixture.

3. In a separate bowl, cream the butter and sugar until light and fluffy, 1 to 2 minutes. Add the eggs one at a time and mix well after each addition.

4. In yet another bowl, combine the orange juice and vanilla.

5. Add the flour mixture (1st bowl) to the butter mixture (2nd bowl) in three batches, alternating with the orange juice mixture (3rd bowl). Ensure they mix well after each addition.

5. Add the mashed bananas and stir them well..

6. Finally, stir in the apple mix prepared earlier.

7. Transfer the mix to the loaf tin.

8. Bake for around 55 to 60 minutes.

9. Check if the loaf is ready by inserting a toothpick. If it comes out clean, it’s ready to be taken out of the oven.

  1. i cut up the apples a bit bigger and i used grapefruit juice instead of the orange juice. i also increased the spices by 1/4 each.it was a bit hit with my family.

  2. YUMMY!!!! I did not have the Vanilla extract, but I decided to make it anyway. I did use about 4-5 teaspoons of vanilla flavored sugar (from belgium) It’s not really that vanilla-ey, so I doubt it made a difference. I cut all the apples into 1/2 inch squares and cooked till the sugar mix thickened considerably. I did not measure the orange juice, just added a bit to help the mixing. Also increased the spices a bit, as I don’t really measure well I just throw ‘em in.
    The loaf pan was extremely full (within about an inch of the top!)and I was worried the bread would rise too high and cause a mess, but it didn’t. It looked great and tastes even better!! Really moist bread with a nice crust, the apples add a wonderful twist on the standard banana bread, and look pretty in the cut slices. A++++ great recipe!
